This month’s SOS (Sweet or Savory) Kitchen Challenge asked readers to whip up dishes with spinach, and wow, did you ever take on this challenge with gusto! We received a dozen fantastic, creative recipes to try that all highlight the super-healthy leafy green.  And yes, a few desserts are included as well!

This month has been ridiculously busy for me, and my SOS Kitchen Challenge co-host Ricki from Diet, Dessert, and Dogs wrote up a wonderful round up for this month!  Since Ricki is the host for this month, I have copied her round up here below, with just a few small tweaks in verbiage and a few additions of my own.  Thanks to Ricki for writing such a great round up, and thanks to all of YOU for participating!  Once again, you have amazed me with your creativity.  My attempt at making a spinach cupcake was dreadful, so I'm way impressed with everyone that came up with successful sweet spinach recipes especially. :)
