Other notes:

  • Most of the following pickled vegetable recipes are free of vinegar and rely on lacto-fermentation in a simple water-salt brine or using naturally occurring vegetable juices. Some use a combination of salt brine and kombucha.
  • Soaked flour recipes use a variety of soaking methods with acids like apple cider vinegar, lemon juice, kombucha, or vitamin C crystals, or with yogurts.
  • Gluten-free sourdough recipes rely solely on naturally occurring yeasts and bacteria and do not include added baker's yeasts.
