Ingredients
- 1 cup red lentils, rinsed
- 2 parsnips, peeled and chopped
- 1 apple, peeled, cored, and chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp curry powder
- 4 cups vegetable broth
- Salt, to taste
- Pepper, to taste
- 1 tbsp olive oil
- Fresh cilantro, for garnish
Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook until translucent.

Add curry powder and cook for another minute, stirring continuously.

Add lentils, parsnips, apple, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until lentils and parsnips are tender.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Season with salt and pepper to taste.

Serve hot, garnished with fresh cilantro.
